This cake is what you make when you crave chocolate. Period. It's easy and so decadent. I usually can only eat 4 spoonfuls and I'm done, but it satisfies my chocolate cravings unlike anything else.
Molten Chocolate Cake
1/2 c butter
6 oz dark chocolate (I use 62% Ghirardelli's or Callebaut)
1/4 c white sugar
2 eggs
2 egg yolks
2 tsp flour
pinch salt
Whipped Cream, strawberries, raspberries, cocoa powder for making the plate more decorative and tasty.
Butter and flour four ramekins. Preheat oven to 450. Using a double boiler with very little heat and very little water to avoid chocolate seizing up, melt chocolate and butter. I like to avoid water and just heat it very slowly on stovetop with a thick bottomed pan or in the microwave, 10 seconds at a time. In a separate bowl, whisk eggs, yolk, sugar, and salt. Whisk/fold the mixtures together. Divide amongst ramekins or keep in covered container in fridge until ready to use. Either bake for 10-12 min depending on oven and desired lava center (you might want it more baked). After baking, run a knife around cake edge and turn carefully upside down onto a plate. Allow to set for 1 minute before pulling off ramekin. Decorate and serve warm.
